Savory Chicken and Tomatoes Freezer Crockpot Meal

The readers have spoken and wanted more freezer crockpot meals! Here is a new one I just made the other day. If you missed my first post on How To Make Crockpot Freezer Meals check it out by clicking the link.? These are completely saving my life now that the school year has began. My kids can be a bit picky too, so I choose meals that I can easily modify once they?ve been cooked. This recipe for Savory Chicken includes stewed tomatoes. My boys won?t touch tomatoes, but they?ll eat the chicken. No problem, I make sure that I pair it with a side that they will enjoy. Either rice with a bag of steamed fresh veggies, or a leftover veggie and pasta from the night before. Same thing with the last recipe I posted for Sausage and Peppers, my boys won?t eat the peppers, but they will eat the sausage. I always make sure I have an easy option available for us to have a complete meal.

Ingredients:

4-6 chicken breasts

1 large can of stewed tomatoes ( undrained)

4 TBS of white wine or chicken broth.

1 large onion

4 garlic cloves

1 cup of chicken broth ( I make my own here is a How To)

salt and pepper to taste

2 bay leaves

4 cups of broccoli ( added while cooking, that?s the tricky part) ( I buy broccoli when it?s on sale and freeze this amount in a separate bag.)

All the ingredients except the chicken

Directions: I like to mix all the ingredients in a bowl together with the exception of the chicken. That way I can be sure that eat bag has an equal amount of chicken. I then use a soup ladle to pour the ingredients in the Ziploc bags. Once again making sure that each has an equal amount.

Before I fill the bags I write the directions on them with a Sharpie. Here is what you should write:

Cook on low for 6-7 hours, add broccoli during the last 30 minutes of cooking. Remove bay leavers prior to serving.

Remember to lay flat and push all the air out before sealing. Freeze flat. I place them in the crockpot frozen and I use my counter to bust up the pieces before I remove them from the bag.
